  2. Prepare 2 tsp of Oil.
  3. Prepare 1/4 tsp of Mustard seeds.
  4. Prepare 1/2 tsp of Urad Dal.
  5. Prepare 1 of Medium Size Onion chopped.
  6. Prepare of Curry leaves few.
  7. You need 2 of Green chillies slit.
  8. You need 1/4 tsp of Turmeric powder.
  9. It's 1/2 tsp of Chilli powder.
  10. It's of Salt-as per your taste.
  11. Prepare of Water-as required.
  12. You need 2 tsp of Jaggery powder.
  13. It's 1 tsp of Ghee.

Parangikai Poriyal/Pumpkin Fry instructions

  1. Peel off the pumpkin skin, take out the seeds and cut into small cubes..
  2. In a kadai, add oil. Once oil gets heat, add mustard seeds and urad dal. Fry it..
  3. Add onions, curry leaves and green chillies. Saute till onions becomes translucent..
  4. Add turmeric powder, pumpkin, chilli powder and salt. Mix well..
  5. Add very little water because pumpkin itself releases water when it cooks. Cover and cook till pumpkin gets cooked and water gets absorbed..
  6. Switch off the flame, add jaggery powder and ghee after 10 mins. Mix well..
  7. Transfer to a bowl. Now it's ready to serve for your lunch..
