- In a heavy-bottomed wok/karahi/ pan, heat 1Tbsp of oil. Add chopped onions, garlic, ginger and curry leaves. Saute for 4-5 minutes on slow heat, till onions turn slightly brown and raw smell of garlic is no more..
- Add desiccated coconut and saute for another minute on slow heat, till coconut is slightly browned..
- Now add the chopped tomatoes, salt, turmeric powder and red chilli powder. Saute on low- medium heat, till tomatoes are cooked well and oil separates..

- In the same vessel, heat 1 tsp of oil and add asafoetida/hing and cumin seeds. Let the seeds crackle. Now add the chopped vegetables, little salt and mix well. Add chopped green chillies(optional) and saute with occasionally stirring on low- medium heat for 2-3 minutes, till vegetables are half done..
- Now add the prepared onion- tomato paste to it. Add 1/2 cup water and 1 cup milk, sugar and stir well on low heat. Cover and cook till vegetables are cooked well and oil separates..
