  1. Prepare of Yellow pumpkin.
  2. You need of potatoes.
  3. Prepare of beans.
  4. You need of carrot.
  5. You need of drumstick.
  6. It's of mango (optional).
  7. You need of green peas.
  8. You need bottle of gourd / Lauki.
  9. Prepare of double beans.
  10. Prepare of grated coconut.
  11. Prepare 1 tbsp of jeera.
  12. Prepare 1 of big onion.
  13. It's 2 of green chilli.
  14. It's 1/2 tsp of mustard seeds.
  15. You need 1/2 tsp of urad dal.
  16. Prepare leaves of curry.
  17. You need 2 tbsps of curd.

I think most of you make this at home.. Avial recipe tamil nadu version - Mixed vegetables, cooked in coconut based gravy and mixed with yoghurt/ curd and flavored with coconut oil and curry leaves. aviyal I made, and I am disclaiming this may not be the authentic aviyal recipe from Kerala… But the tamil version that we make at home. Take the vegetables which take a longer time to cook in a pan or pot. Serve avial with rice, kerala sambar and some papadums.

Aviyal (Mixed vegetables curry) Recipe instructions

  1. Take fresh vegetables of you choice,like yellow pumpkin, potato, beans, carrot,drumstick,mango (optional),green peas,double beans etc..
  2. Clean,wash and cut the vegetables into 1 inch pieces.Pressure cook them for 1 whistle and keep them aside..
  3. Coarsely grind grated coconut,onions 1 big,green chillies, cumin seeds (jeera)..
  4. Keep the cooked vegetables on the stove and add in the coarsely grounded ingredients.Add salt to tatse,cook till the raw smell goes off. Add little curd to itand mix well..
  5. Temper some mustard seeds,urad dal and curry leaves in 1/2 tsp oil and add to the curry..
  6. Serve hot with rice and papad.
