Ingredients of Mixed Veg Masala

  1. You need 2 cups of chopped veggies (potato, capsicum, cauliflower) carrots, beans.
  2. It's 2 tbsp of boiled peas.
  3. You need 1 of medium onion chopped.
  4. It's 2 of tomatoes chopped.
  5. It's 1 tbsp of chopped ginger.
  6. You need 2 tsp of chopped garlic.
  7. You need 1 of green chilli chopped.
  8. It's 2 tsp of mustard oil.
  9. It's 1 tsp of ghee.
  10. It's 1/3 tsp of panch phoran.
  11. You need 1/3 tsp of turmeric powder.
  12. It's 1/3 tsp of Kashmiri red chilli powder.
  13. Prepare as needed of Salt.
  14. It's 1 packet of Maggie magic masala.
  15. It's 2 tbsp of mustard oil to fry the chopped veggies.

Mixed Veg Masala instructions

  1. Heat 2 tbsp oil in a kadhai. Fry the chopped veggies one by one till crispy. In the same kadhai take the rest mustard oil and heat. Add the panch phoran and let it splutter. Add chopped onion and garlic, chopped chilli and saute till onions are translucent. Mix chopped ginger and saute for half minute. Add chopped tomato, turmeric powder, Kashmiri red chilli powder, salt and 1 tsp ghee. Cook till oil and ghee separate the cooked masala..
  2. Now mix the fried veggies, Maggie magic masala and 1/3 cup of water. Mix nicely, cover and cook for 2 minutes or till the beautiful aroma comes. The delicious curry is ready to serve. Enjoy with Roti /Parantha/Luchi. Thanks.
