- Prepare 300 g of diced venison.
- Prepare 1 can of butter beans.

- It's Splash of wine.
- You need 250 ml of beef stock.
- You need 1 can of chopped tomatoes.
- You need 1 sprig of lemon thyme.
- It's of Salt and pepper.
Drain and rinse the samp and borlotti beans, then place in a large saucepan and add enough cold water to cover well. The traditional beans for this stew are fagioli di Lamon, a dried cranberry type from Lamon, a town in Veneto. The borlotti bean is an oval to round, ivory and dark red to brown speckled and blotched bean. It comes in a pod very similar, streaked ivory and dark red.

- Preheat the oven to 120c.
- Dice the vegetables and rosemary.
- In an oven safe pot with a lid sautΓ© the vegetables and rosemary in olive oil.
- After a few mins add the venison and brown off the meat.
- Add the mixed herbs and bay leafs. Add the wine and boil off the alcohol.
- Add the stock and the tomatoes and place in the oven for minimum 3hrs with the lid on.
- 1hr from being ready add chopped mushrooms and beans. Cook for a final hour.
- Serve and garnish with lemon thyme.
