Ingredients of Chilli-Quorn-Charlie

  1. Prepare 300 g of Quorn mince.
  2. It's 2 tbsp of oil.
  3. Prepare 1 of medium red onion.
  4. You need 1 of red chilli.
  5. You need 1 of red pepper.
  6. Prepare 4 cloves of garlic.
  7. Prepare 2 tsp of smoked paprika.
  8. Prepare 2 tsp of cumin.
  9. You need 3 tsp of ground coriander.
  10. It's 1 tsp of Chipotle chilli flakes.
  11. Prepare 1 tbsp of tomato puree.
  12. It's 400 g of can chopped tomatoes.
  13. It's 500 g of can passata.
  14. It's 250 ml of vegetable stock.
  15. You need 400 g of can kidney beans.
  16. You need 400 g of can borlotti beans.
  17. It's 1 tbsp of honey.
  18. Prepare 1 tbsp of Worcester sauce.
  19. It's of Salt and pepper.
  20. You need of Boiled rice.
  21. It's of Tortilla chips.
  22. Prepare of Grated cheese.

Chilli-Quorn-Charlie instructions

  1. Finely chop the onion and add to a large pan with the oil. Cook on a low heat for 5-8 mins until soft.
  2. Finely dice the red pepper, red chilli and crush the garlic. Turn the heat up to medium and add to the pan, for a few minutes until softened..
  3. Add the spices and stir for 2 mins until aromatic.
  4. Add the tomatoes, passata, puree and stock. Stir and let simmer for 8 mins..
  5. Add the drained beans, quorn, honey and Worcester sauce. Stir and simmer for 10 mins. Or leave on a low heat until ready..
  6. Add salt, pepper and more Worcester sauce to taste. Serve with boiled rice, tortilla chips and grated cheese..
