Ingredients of Chilli Jam & Cheddar Scones

  1. You need 225 g of self-raising flour.
  2. You need 55 g of butter.
  3. You need 1 tsp of baking powder.
  4. It's 85 g of mature cheddar cheese.
  5. It's 150 ml of milk.
  6. It's 3 tbsp of chilli jam.
  7. It's 1 of egg.
  8. It's of salt + pepper.

Chilli Jam & Cheddar Scones step by step

  1. Sift flour into a large bowl and mix in baking powder and salt.
  2. Add cubes of butter and using your fingertips rub together butter and flour until it resembles breadcrumbs.
  3. Add grated cheddar and mix well.
  4. Add milk and mix until the mixture comes together as a soft dough.
  5. Spiral in chilli jam trying not to overmix.
  6. Roll out dough before chilling in the fridge for 1 hour.
  7. Preheat oven to 200°C (fan oven).
  8. Using a cookie cutter cut 12 scones and brush with whisked egg salt and pepper.
  9. Bake for 12 minutes in preheated oven.
