Paneer Kofta with Makhni Gravy step by step
- For the greavy,first in the pressure cooker put roughly chopped tomato,onion,cloves,cinnamon stick. Then take a small bowl in which put cashew nut,watermelon seeds,ginger,garlic clove and green chilli. Put this bowl in the middle of the pressure cooker. Add 1/2 cup water and close the pressure cooker lid and pressure cook for 3-4 whistles on high flame and 2 whistles on low flame..
- Meanwhile we prepare our koftas. Take a bowl,in that mix paneer,chilli flex,oregano and salt and knead a Paneer so it will form a dough. Then make a small small ball from that and out it aside..
- In another bowl, take mashed potatoes,salt,turmeric powder,red chilli powder and knead it well.Corn flour will help in binding the potatoes..
- Take a small portion of the potato and flat it with hands and make a small thin layer from potato. Then put paneer ball in the center and then cover it with the potato. Make every kofta with the same method. Once kofta is ready then coat it with corn flour..
- Heat the Oil to fry the kofta and fry it until it becomes golden brown..
- Now open the pressure cooker and make a paste of the cahsew nut in the mixture. Thenmake a smooth paste of tomato and onion. Keep this both paste in a separate bowl..
- Take a non-stick pan and add oil and cumin seeds. Then add tomato,onion paste and cahsew paste and cook it until oil seperates from it..
- Add all the spices turmeric powder, red chilli powder, kashmiri powder, coriander cumin powder, shahi paneer masala and garam masala and mix it will. Cook it for 4 to 5 mins. Add 1 cup of water and let it boil until it becomes thick. Switch off the flame. Add malai and kasoori methi into it..
- Now in the serving plate,add some gravy at the bottom and put kofta on it. Garnish it with green coriander..
