  1. In a kadai, add oil. Once oil gets heat, add mustard seeds, cumin seeds and coriander seeds. Fry it..
  2. Add onions, curry leaves and green chillies. Saute till onions becomes translucent..
  3. Add tomatoes, brinjal and garlic. Saute well..
  4. Add turmeric powder, chilli powder and salt. Saute for 2 mins..
  5. Add required water. Cover and cook for 15 to 20 mins in medium flame..
  6. Take out the kadai from the flame. Mash the gravy well when it's hot. If it cools down you cannot mash it properly..
  7. Garnish with coriander leaves. Transfer to a bowl..
  8. Now it's ready to serve. Serve with idli, dosa and paniyaram..
