Ingredients of Carrot chilli mango pickle

  1. Prepare 500 gm of carrot.
  2. It's 100 grm of Chilli.
  3. Prepare 100 gm of raw Mango.
  4. Prepare 1/2 tsp of Fenu greek seed.
  5. Prepare 2-3 tsp of mustard seeds.
  6. You need 2-3 tbsp of cumin seed.
  7. Prepare 4-5 tbsp of mustard oil.
  8. It's as per taste of Salt.
  9. It's 3-4 tsp of Vinegar/ lemon juice.
  10. Prepare 3-4 tsp of fennel seeds.
  11. Prepare 3-4 tbsp of sabut coriander seeds.
  12. Prepare 1-2 tsp of turmeric powder.
  13. You need 2-3 tsp of Red chilli powder.
  14. Prepare 1 tsp of carom seeds (optional).

Stir fry for a few mins then add water to fully cook the carrots and mangos. Finally add the remaining green chillies and the rest of the achar masala. This is a very simple recipe, which goes well with most parathas and vegetables. You can make it spicier if you like, by adding some more chilli powder.

Carrot chilli mango pickle step by step

  1. First wash and dry the chillies then chopped chillies into two parts then chopped the carrot as per your choice and chopped mango then dry in the sun for 3-4 hrs.
  2. Then roast the all whole masala then grind it(dardara).
  3. Heat the oil in a pan add carrot, turmeric powder saute for 30 sec in high flame then after cover it with lid for 3-4 min in slow flame.
  4. Then take a bowl add oily masala of carrot, dry chopped chillies and dry chopped mango add whole masala grinded powder, red chillies,salt and vinegar then mix it well together.
  5. After that pour the pickle into a air tight container jar kept in under sun for 2-3 days.
  6. Carrot,chilli mango pickle is ready to eat.
  7. Raw mango, carom seeds is optional.
  8. For preservatives of this pickles add extra 2-3 tbsp oil in a jar to stay and enjoy long time.
  9. Vinegar / lemon juice is another option for preservatives.
