- Prepare of Salad Dressing.
- You need of Juice of 1 lemon.
- Prepare 2 tsp of honey.
- Prepare 1/2 cup of olive oil.
- Prepare 1/4 of red onion (roughly chopped).
- You need 2 tsp of whole grain mustard.
- It's of Salt and pepper.
- You need of Salad.
- You need 2 of large ripe vine tomatoes.
- You need 1 of green chilli.
- Prepare 1/4 of red onion.
- You need 1 pack of microwave quinoa & rice mix.
- It's 1 tbsp of chopped dill.
Zingy Quinoa & Rice Salad instructions
- Add the dressing ingredients to your blender and blitz until nicely blended - but don’t purée it, a few lumps are fine. Taste it here and adjust with more honey, salt and pepper as you like..
- Chop the salad ingredients. Remove the seeds from the tomatoes before chopping (this stops the salad getting watery). Mix it all together..
- Add the quinoa (check the packet instructions and cook then cool if needed)..
- Add the dressing a bit at a time until you get a good coating - don’t do what I did and just tip it all in. It was a bit too much and made it all just slightly too wet..
