- Prepare 3 cups of Basmati rice.

- Cook rice with the vegetable stock or the maggi cubes until firm..
- Use some salt in it while cooking according to taste..
- Also add whole spices to it along with half of the chopped coriander..
- In a cooking pot, heat ghee and saute the sliced onions..
- Add the bay leaves too..
- After the onions get sauteed to a nice golden colour, add the chilli flakes..
- Followed by the garam masala and the cumin powder..
- Now add the veggies and saute these all for 5 to 6 minutes..
- Finally add the mango cubes..
- Cover and cook for 2 minutes..
- Now add the cooked rice and mix gently. Fluff up the rice using a fork and adjust salt at this point..
- Garnish with toasted almonds and raisins and some boiled eggs too. However it is optional..
- Add a hint of freshly chopped onion greens too as a garnish..
