- It's 1 can (15.5 oz) of Black beans.
- You need 1 can (10 oz) of diced tomatoes with chilies.
- It's 1 can of corn, drained.
- It's 1 pkg (1 oz) of chipotle taco seasoning.
- Prepare 1 of jalapeno pepper, diced.
- Prepare 1 tbsp of oil.
- It's 1/4 of onion, diced.
- Prepare 1 of glove minced garlic.
- Prepare 7 of 6" corn tortillas.
Black Bean & Corn Tacos instructions
- In a skillet add the oil. When hot add the corn, pepper and onion till corn is lightly browned.
- Add the rest of the ingredients and cook until heated through, about 5 minutes, being careful not to mash the beans.
- Finally serve on warmed corn tortillas with a squeeze of lime. Serve with chopped onions, cilantro, shredded lettuce, diced tomatoes, cotija or favorite shredded cheese, sour cream, salsa, any toppings that you like. Serve with a side of Mexican rice.
