- In a deep plate put 3 eggs and beat with a fork for 2 minutes. Then add salt & Black pepper and 1 tbs milk and beat with the fork. Then add the curry powder and mix with fork. Lastly add the Chipotle Sauce and mix. Set aside..
- In a wok heat 1 cup oil, then add onions and fry for 2 minutes half cooked then add the zucchini and stir fry for 3 minutes then add the capsicum, French beans and tomatoes and stir fry for another 5', add salt & black pepper..
- Let the veges almost cook then pour the egg's mixture on top, make sure evenly spread then sprinkle the grated cheese on top and put the lid on. After 3 minutes lower down the stove temp. Though on top the mixture is liquify with cheese but underneath the omelette starting to be burnt.
